Salami, Swiss, and Egg Appetizer

Serves 4


  • 3 eggs
  • 1 tsp vegetable oil
  • 10-12 salami (5-8 oz.) slices
  • 3 oz. soft Swiss cheese, creamy and spreadable (i.e. Laughing Cow brand)
  • 1/4 c. arugula
  • 1/2 cup HerbNZest Chipotle Cranberry Relish,
  • 1/2 c. dried cranberries
  • crostini (toasted baguette slices)


Beat the raw eggs in a bowl until fluffy. Heat oil in a pan and scramble eggs on low heat. Remove while eggs are still soft.

Separate the scrambled eggs into bite size portions. On a plate, layer the salami first, followed by some arugula, then egg, then a dab of creamy Swiss and finally top with 1 tsp of HerbNZest Chipotle Cranberry Orange Relish. Serve.

Garnish with dried cranberries and serve as a bite sized Tapa or over French baguette.
