- 1 pack Beyond Meat chicken-free strips (thawed)
- 1 c. plain Greek yogurt 10-12 large endive or lettuce leaves
- 1/2 c. HerbNZest Basil Peach Raisin Chutney
- 1/3 c. carrots, chopped
- 1/3 c. celery, chopped
- 4-5 leaves of fresh basil, chopped
- 1/2 c. croutons
- Salt and black pepper to taste
Chop the chicken-free strips into 1 inch cubes. In a large bowl mix chicken cubes, yogurt, chutney, carrots, celery, croutons, basil, salt, pepper and toss until ingredients have mixed well.
Then scoop about 1 tsp of the mixture into each large lettuce leaf and serve.
