No-heat Chicken-Free Salad

Serves 2

Ingredients:

  • 1 pack Beyond Meat chicken-free strips (thawed)
  • 1 c. plain Greek yogurt 10-12 large endive or lettuce leaves
  • 1/2 c. HerbNZest Basil Peach Raisin Chutney
  • 1/3 c. carrots, chopped
  • 1/3 c. celery, chopped
  • 4-5 leaves of fresh basil, chopped
  • 1/2 c. croutons
  • Salt and black pepper to taste

Preparation:

Chop the chicken-free strips into 1 inch cubes. In a large bowl mix chicken cubes, yogurt, chutney, carrots, celery, croutons, basil, salt, pepper and toss until ingredients have mixed well.   

Then scoop about 1 tsp of the mixture into each large lettuce leaf and serve.
