5 Grain Summer Salad with Mustard Vinaigrette Dressing

Serves 4


  • 1 cup uncooked five grain mix
  • 6 tbs olive oil (divided in 2 portions)
  • 3 tbs lemon juice
  • 1 onion, medium, chopped
  • 1 carrot, chopped
  • 1 cucumber, medium cubed
  • 1 tomato, diced
  • 1/2 cup cilantro, de-stemed and chopped
  • salt and black peppercorn per taste


Rice: Cook rice according to the instructions on the package.

Vinaigrette: Mix mustard, 3 tbs oil and lemon juice. Add a sprinkle of salt and freshly ground pepper. Using a whisk, mix the ingredients to make a vinaigrette dressing.

Veggies: In a medium skillet, add remaining oil and sauté onions, add carrots. Add cooked rice and sauté some more. Add salt and pepper to taste. Add the cucumbers, tomatoes, and cilantro. Mix in the dressing and toss. Serve cold with a side of greens.
