Baked Vegetable Sandwich with Tomato Relish

Serves 4


  • 2 sweet potatoes, medium
  • 10-12 cauliflower florets
  • 1 head of butter lettuce
  • 4 tbs olive oil
  • 4 slices of sour dough or Ciabatta
  • 1 tbs red wine vinegar
  • 1 c. HerbNZest Chive Tomato Relish
  • fresh ground black pepper and salt to taste


Preheat oven to 400 degrees.

Peel the sweet potato and cut into ½ inch slices. In a bowl place the cauliflower florets and sweet potato and add 3 tbs oil, and salt. Toss well so that the vegetables are coated well with the seasoning. Then wrap the vegetables in aluminum foil and bake for 30 minutes at 400 degrees.

Remove from oven. Toss the lettuce in 1 tbs of oil and vinegar. Then on a piece of bread, layer 3 lettuce leaves, followed by 1 layer of sweet potato wedges, followed by a layer of cauliflower. Then add 2-3 tbs of  HerbNZest Chive Tomato Relish on top. Sprinkle salt and fresh ground pepper on top. Serve as an open sandwich while still hot.
