Pumpkin Pesto Marinade for Grilled Vegetables

Serves/makes 1/2 cup


  • 4 tbs olive oil
  • 1 tbs balsamic vinegar
  • 2 garlic cloves, minced
  • 2 tsp Italian herb spice (oregano, thyme and rosemary)
  • 2 tbs HerbNZest Dairy-Free Curry Pumpkin Pesto
  • Salt and freshly ground black pepper to taste

Preparation: Mix garlic, salt, vinegar, olive oil, herb mix, pesto and pepper to make a marinade. Beat with a fork or mix with a hand mixer. Brush the vegetables with this light marinade just before and during grilling.

Arrange the vegetables on a platter and serve HerbNZest Dairy-Free Curry Pumpkin Pesto as a dipping sauce. Serve warm.

Note: Make with the vegetables of your choice. White onion, zucchini, bell pepper, and asparagus are recommended.
