Meal, serves 4, 300 cal/serving, 25 minutes
- 8oz your favorite stir-fry noodle
- 1 large broccoli head
- 6 celery stalks
- ½ cup shredded carrots
- 1 tbs sesame oil
- 1/2 jar HerbNZest Curry Ketchup
- 1 tbs soy sauce
Boil the noodles as noted on the package. When the noodles are finished cooking set them aside in a bowl.
Cut the the broccoli into small bite size florets. Using a vegetable peeler, shave the celery stalks into ribbons and then cut them down into inch long pieces.
Heat up a wok or large frying pan over medium-high heat. Add the sesame oil and swirl along the wok. Add the broccoli florets, stir to coat the florets with the oil, sauté for one minute and then add the carrots. Sauté for another minute and then add the celery. Sauté one more minute, lower heat to medium and then stir in noodles and curry ketchup. Coat the stir fry evenly with the sauce and serve hot.
