- 2-3 eggs
- 1/4 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tsp olive oil
- 3 tbs HerbNZest Chive Tomato Relish
- 1/2 cup shredded mozzarella cheese
In a bowl, beat eggs, milk, salt and pepper. Heat a nonstick skillet at medium heat and add olive oil. Pour egg mixture into the skillet and lift edges to let uncooked portion flow underneath.
When eggs are nearly set, spread 2 tbs HerbNZest Chive Tomato Relish in the center, and add the cheese. Fold the omelet in half over filling and sprinkle cheese on top. Cover and cook until cheese melts and the inside is cooked through. Serve another tbsp of HerbNZest Chive Tomato Relish over the omelet and serve.
