Fried Chicken with Curry Ketchup

Appetizer, serves 4, 350 cal/serving, Cook time 30 min, Marinade 1 hr



 

Ingredients (serves 4)

  • chicken legs, 8 pieces
  • 1 cup low fat Greek yogurt
  • 1 medium onion ground
  • 1x 7.3oz jar of HerbNZest Curry Ketchup
  • 1 egg
  • 1 cup flour, for dredging
  • sunflower oil, enough for frying
  • salt and pepper to taste


Directions for Preparation

Mix yogurt, salt, onion, salt, pepper and 1/2 jar HerbNZest Curry Ketchup into a batter. Marinade chicken in batter. Cover bowl with cling wrap and let it marinade for an hour. Heat oil in medium high in a deep frying pan filled up to half. Crack egg in a separate bowl and whip it up. Dip marinated chicken leg in egg and then dredge in flour. Dust off excess flour. Place chicken slowly in hot oil and turn heat down to medium. Fry chicken until golden brown and crisp (about 8 minutes for white meat chicken and about 12 minutes for dark meat). Serve hot with remaining HerbNZest Curry Ketchup.
