Grilled Mushroom with Goat Cheese and Peach Chutney

Appetizer, serves 3-4, 120 calories/serving, 15 minutes


12-15 small white button mushrooms
2 tbsp. olive oil
3 tbsp. goat cheese
½ jar HerbNZest Basil Peach Chutney
¼ medium onion chopped
¼ tsp paprika

Preheat toaster oven to 350 degrees. Remove the mushroom stems to expose the rounded cavity. Chop the mushroom stems and sauté with onion and paprika for 1-2 minutes. Mix in goat cheese and stuff the mushroom cavities. Brush mushrooms with remaining olive oil, place on baking tray and bake top down for 10 minutes. Remove from oven, top with about ½ tsp. peach chutney and serve.
