Goat cheese stuffed mushrooms topped with peach chutney

Ingredients (serves 4-6)

10-12 white button mushrooms

3 tbsp olive oil

1/3 cup goat cheese

4-6 tbsp peach chutney

1/2 medium onion chopped

1/2 tsp paprika

Directions

Preheat oven to 350 degrees. Take out the mushroom stems so as to expose the rounded cavity. Chop mushroom stems. Saute with chopped onion and paprika in 2 tbsp olive oil for 1-2 minutes. Mix in goat cheese to create stuffing. Stuff rounded cavity with goat cheese mix. Brush mushrooms with 1 tbsp olive oil, place on baking tray and bake top down for 10-12 minutes. Remove from oven and cool. Top each cmushroom with about 1/2 tbsp HerbNZest Basil Peach Raisin Chutney.
